Holding Phase

Then comes the time of aging, a test of vision and imagination, as this stage can extend beyond the entire life. In the Hennessy cellars, barrels from over 100-year-old oak trees stand in dim light, infused with heavy notes, exclusively from French forests. There are over 300,000 barrels in total. Hennessy has one of the largest reserves of cognac eaux-de-vie in the world. The Founder’s Cellar is a symbol of this heritage, the timeless heart of Hennessy Maison. Each of these eaux-de-vie has been aged for at least fifty years, and many are a hundred years old. Once they have reached their peak potential, they are placed in large wicker-covered glass demijohns to preserve their extraordinary qualities. It will later be used rarely to create cognac. The oldest eau-de-vie dates from 1800.
