I created this low proof riff on Trader Vic’s Tonga from his 1946 Book of Food & Drink when I was in the mood for something light yet flavorful to round out the evening.

Sherry Tonga

Shake with ice, strain into a Tiki mug, and fill with crushed ice. I garnished with a mint sprig, but an orange slice and cherry would not be out of place here as a garnish (in addition to the mint or in place of it).

Serving and consuming

Amontillado with food

Amontillado should be served at a temperature of between 12 and 14º C.

It is an ideal wine to accompany soups and consommés, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses.

It combines perfectly with vegetables such as asparagus and artichokes.
