Ingredients:
– 1.5 oz Vietnamese rice spirit (or substitute with a light rum if unavailable)
– 0.5 oz ginger liqueur
– 1 oz fresh lime juice
– 0.75 oz lemongrass syrup
– 2 oz coconut water
– A dash of Angostura bitters
– Fresh mint leaves (for garnish)
– Thinly sliced cucumber and a lime wheel for garnish
– Ice cubes

Instructions:
1. To make the lemongrass syrup, combine equal parts sugar and water in a saucepan with chopped lemongrass. Bring to a boil and let simmer for about 10 minutes. Allow to cool, then strain out the lemongrass pieces.
2. In a cocktail shaker, combine the Vietnamese rice spirit, ginger liqueur, fresh lime juice, lemongrass syrup, and coconut water. Add a handful of ice cubes.
3. Shake vigorously for about 15 seconds to chill and blend the flavors.
4. Strain the mixture into a highball glass filled with ice.
5. Add a dash of Angostura bitters on top.
6. Garnish with fresh mint leaves, a thinly sliced cucumber, and a lime wheel on the rim of the glass.
