The warm nuttiness of Amontillado marries with rustic, earthy tones of the carrot eau de vie, and plays perfectly with the anise notes of the of the aquavit.  The ginger adds spice, while honey and orgeat give it sweetness.  It is a savory, refreshing cocktail that brings you back for more.
